Friday Favorites


Tuesday ABC aired Country’s Night to Rock which was a special that highlighted some of the performances from CMA Fest. I was so luck to get to witness all of the acts in person. If you ever get the chance, GO!!! So much fun!

tattooYes, we did walk around with a temporary tattoo to match Miranda’s.


Enjoyed so many artists, of course EC was my favorite! It rained Saturday night but that didn’t stop us! We also met Stacey and Toni who were so much fun!


June 5th, Miranda Lambert opened her store, Pink Pistol, for a temporary time in Nashville. During CMA fest the line to get in was ridiculous so Whitney and I took an impromptu trip on July 26, the day before the store closed. Of course, we had to buy the famous “Thelma & Louise” shirts!


I may have gotten a little carried away with my purchases. Oh well, the PINK PISTOL shirt is super comfy!


While we were in town, we checked out the Nashville Farmers Market where we split this delicious pizza from Bella Nashville. The ingredients were so fresh! I definitely recommend checking them out!


Tuesday night I broke out my Thelma shirt while reliving CMA fest. All I was missing was my sidekick Louise!

Portabella Pizza

Last night was my turn to deliver dinner to the new parents, Chris and Jo Mae. I made a version of this recipe for Mexican stuffed shells. After delivering their food, I needed a quick idea for our dinner. I had bought a couple of portabella mushroom caps last week and decided to try them out as mini pizzas. All I had on hand was mozzarella and turkey pepperoni but I look forward to making these again with other toppings.


  • portabella mushroom caps
  • pizza sauce (I use Classico brand)
  • toppings of choice (I used mozzarella cheese, Italian seasoning, and turkey pepperoni)

Spray baking pan with non-stick spray and pre-heat oven to 400 degrees,

Clean and scrape out the inside of mushroom cap, cutting the stem as short as possible,

Place mushrooms onto baking sheet (cap side down) and assemble pizzas. Bake for 10-15 minutes.

Skinny Pizza

Pizza is one of those foods that I could eat anytime, anywhere. Chris likes it too although he will argue with anyone that the best pizza is the take and bake pizzas from Walmart. I beg to differ! Anyway, we are trying to start eating a little healthier during the week so I found this recipe and changed it up a little for our taste.



  • tortilla (I used burrito size)
  • pizza sauce
  • Italian seasoning
  • low fat mozzarella cheese
  • red pepper flakes
  • topping of your choice (I used turkey pepperoni, mushrooms, and black olives)

Preheat oven to 400 degrees.

Assemble pizza on ungreased baking pan.

Cook approximately 10 minutes.
