Weekend Happenings

Weekends in the south are centered around one thing: College Football!

At CMA Fest this year, Stacey promised to make a trip to Alabama during the fall. Since she is such a big LSU fan, it only made sense for her to plan a visit for the LSU/Alabama game!

Whit picked her up on Thursday in Nashville and then met me for dinner at Bravo! After dinner, we returned to the house to catch up.

Friday, I worked half a day then met the girls for lunch and shopping. After that, we decided to head west to meet up with the husbands and give Stacey a tour of where Whitney and I grew up.

After dinner, our first stop was Whitney’s Uncle Kip’s pool house for moonshine tasting and margaritas. Of course, I lived through everyone else while sipping on my water čÖé

Next up, we took her to the local beer joint where you never know what will walk through the door! A proper Alabama tour isn’t complete without making a quick pit stop here.

Saturday morning we got ready and headed down south for some football! Unfortunately, it rained ALL day which resulted in an impromptu stop in Birmingham for rain boots! Best purchase I have made all year.

To say this trip was a doozie would be putting it mildly. Literally as we were pulling into our parking spot, Chris’s jeep started smoking a little then made a horrible sound and started smoking alot! He screamed “get out!” so we all grabbed our belongings and ran! I wish that was the end of this story….

We tailgated, toured the quad, and then headed into the stadium. Stacey and Whitney had tickets on the 50 yard line while Chris and I were in the upper deck. 22302957684_f7bdd8ca9d_o

Lucky for us, Alabama won because that was the last positive thing to happen until 3am….

Once we got back to the jeep, Chris wanted to hang out for a little while to let traffic clear. We got on the road around 12:30am and made it about 2 miles before the jeep died. Im talking, no breaks, no power steering, D-E-A-D! Chris managed to pull into a parking lot instead of being stuck on the side of the road.

To make a long story short, we were stranded until around 3am when my brother’s friend, Patton came to our rescue. We ended up making it home around 5:30am.

After a few hours of sleep, we made it to Nashville just in time for Stacey to catch her flight.

As bad as I hated that we had car trouble during her stay at least we made memories. Ha! That’s my positive spin on the situation. Now we are counting down until June to see her and Toni again at CMA fest!

Friday Favorites

T-G-I-F! Whew! Why is it that some weeks seem longer than others?! I think this week was long for me because Chris was on travel all week. Since he was off for almost 3 months, I had got use to spending so much time together. A week apart seemed so long!

As usual, I am linking up with Narci, Andrea, and Erika for my Friday Favorites.

Last night, Jo, Stacey, and I attended “Ladies Night” at The Melting Pot. This was only the second time that I have been there but it was just as good as I remembered. Of course, dessert was my favorite. Shocker right?!

Last night was a busy night for me! After returning from dinner, I had to watch the return episode of Scandal. Am I in the minority when I say that the episode was a bit underwhelming?

Let’s face it, the only reason I will watch the Super Bowl is for the commercials and the possibility that Missy Elliott will make an appearance during the half time show. As of now, we don’t have plans to watch the game with anyone but if you do, my corn dip and fiesta pinwheels make GREAT game day snacks!

Enjoy your weekend. Monday will be here before we know it!

Jalape├▒o Bacon Pinwheels

There is just something about the combination of jalape├▒o and bacon that makes my mouth water! Throw in some cream cheese and you have found the way to my heart.

I posted this jalape├▒o bacon cheese ball earlier this football season. If you enjoyed it, I think you would love these pinwheels! They are the perfect tailgating snack!

  • 2 cans of crescent rolls
  • 8oz cream cheese
  • 1/2 package of bacon cooked and crumbled
  • 3 jalape├▒os seeded and chopped
  • 2 cups shredded cheese

Preheat oven to 350 degrees. Spray a cookie sheet with non-stick spray and set aside. Unroll both crescent doughs and pinch the seams together.

In a medium bowl, combine cream cheese, bacon, and jalapeños. Spread half of mixture onto one can of unrolled dough and the other half of mixture onto remaining dough. Top with 1 cup of cheese each.

Tightly roll lengthwise. Cut 1-2inches apart and place onto cookie sheet. (optional:sprinkle a little more cheese onto pinwheels before placing into oven) Bake approximately 10 minutes or until crescents begin to brown. Enjoy!

As of this past Friday, Chris’s title of CRNP is official.. he passed boards!! Thank goodness he did otherwise his surprise party on Saturday wouldn’t have been near as exciting ha!

First, let me just say that keeping a party in our home a secret from Chris may be one of the hardest things I have had to do since we got married. Every plan I made to get him out of the house Saturday seemed to backfire. Luckily, with the help of our friends Chris and Jo Mae, our final plan worked like a charm and he was so surprised!!

With our Christmas decorations already up, I really didn’t have to decorate much. I made this chalkboard pennant banner Thursday night after Chris went to bed. Easy and simple and went well with our rustic Christmas decor. IMG_0167

I found white tablecloths on sale at Target and used them along with a burlap runner that I purchased at Walmart for the tables. I then took cheap grapevine wreaths, added a few berry picks, and candles and voilà. Chris was out of the house by 8am that morning which gave me just the right amount of time before guests started arriving around 1230pm. Mom aka superwoman was at the house by 930am with most of the food. The fact that her and my father now own a restaurant sure does come in handy!

A full house of our closest family and friends, good food, achieved goals, and a BAMA win all made for the perfect Saturday afternoon! Thanks again to everyone who came out to celebrate with us. A huge thank you to those who worked with me behind the scenes to make it all happen! We love you all!!

GameDay Sandwiches

Out of all of the things I make, these little sandwiches are one of Chris’s favorites! Just looking at that brown sugar glaze has my mouth watering! Make these for your next gameday gathering. They will be a hit, I promise!

  • package of Kings Hawaiian Rolls (I used white but wheat would work too)
  • pound of sweet ham (I used Boars Head Maple Glazed)
  • shredded mozzarella cheese
  • 1/2 cup butter melted
  • 3 tablespoon Worcestershire sauce
  • 2.5 tablespoon mustard
  • 3 tablespoons brown sugar
  • 1/2 teaspoon onion powder

In a 9×13 pan, slice rolls in half. Inside each roll, place 2-3 pieces of ham and top with shredded cheese. Return top halves of roll. Whisk melted butter, brown sugar, mustard, Worcestershire sauce, and onion powder until combined. Pour entire mixture over rolls. Cover with foil and place in the fridge for 2-4 hours. Once ready to cook, preheat oven to 350. Bake rolls, covered for 10 minutes. Remove foil and bake an additional 10 minutes.
