Pasta is my comfort food. There are some weeks when Chris is traveling that I eat pasta for dinner 5 nights in a row! I’m a carb Queen, what can I say.. If you like my Mexican Shells then you must try this Italian spin on them.
- 1 jar of your favorite pasta sauce
- 16oz cottage cheese
- 15oz Ricotta cheese
- 25 or so large pasta shells
- Italian turkey sausage (I used turkey breakfast sausage and this recipe)
- 1/2cup Parmesan cheese
- 1.5Tablespoon Italian seasoning
- 1.25cups mozzarella cheese
Preheat oven to 350 degrees. Reserve 1/2 cup of pasta sauce and set aside. In a large saucepan, boil noodles as directed on package.
While noodles are boiling, cook sausage on stove-top until brown and crumbled. Drain and return to pan. Add remaining pasta sauce and simmer on low.
In a large bowl, mix Italian seasoning,ricotta, cottage, and Parmesan cheeses.
Once noodles are cooked, drain and set aside. Spread your reserved 1/2cup of sauce onto bottom of 9×13 baking dish. Fill each noodle with cheese mixture and place directly onto sauce in baking dish. Be sure to set noodles seam side up. Once all noodles are stuffed and in the dish, pour meat sauce on top of noodles. Cover with mozzarella cheese and bake for 25-30 minutes.
