Turkey Meatloaf

meatloaf1Faced with the dilemma of using what I had on hand or making a trip to the grocery store, I used the ground turkey meat we had in the fridge and threw together this easy meatloaf.

  • 1 lb ground turkey meat
  • 1 large egg
  • 1/2 tsp parsley
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 3 tbsp ketchup
  • Dash of Worcestershire sauce
  • 1/2 cup bread crumbs (I used Italian style Panko crumbs)

  • 1/3 cup ketchup
  • 3 tbsp brown sugar (add more for a sweeter sauce)
  • 1 tbsp mustard
  • Dash of Worcestershire sauce

Preheat oven to 350. Spray loaf pan with non-stick cooking spray and sit aside. Combine all ingredients in medium size bowl. If mixture seems too “wet” add additional bread crumbs. Transfer mixture into loaf pan and bake for 20 minutes.

While meatloaf is cooking mix ingredients for sauce. After the 20 minutes of cooking, remove from oven and pour sauce over top of meatloaf. Return to oven and cook for an additional 10 minutes.meatloafsauce

tip: For extra flavor, try adding chopped green onions to the meatloaf mixture. Also, we enjoy our meatloaf with a side of mashed potatoes!
